I couldn’t agree more with this statement, and his inventive and delectable creations are perfectly in balance with nature. I had the pleasure of meeting Chef Frédéric Vardon on my trip to Courchevel, France.
Vardon is a Michelin-starred chef, with restaurants located in Paris and in Courchevel. Born in Normandy, he hails from a family of farmers and charcutiers (the art of making sausages and other cured, smoked and preserved meats). Frédéric completed his culinary training at Alain Dutournier and subsequently apprenticed with chef Jean-Pierre Morot-Gaudry.
After completing his apprenticeship, he went to work at Mionnay, followed by Benoit Tokyo and Alain Ducasse at the Dorchester. Chef Frédéric Vardon currently works at the Parisian restaurant Le 39V, which is located on a rooftop terrace on Avenue George V. Le 39V is a contemporary restaurant serving nouveau French cuisine. It known not only for its superior food, but also for its exceptional service. It received its first Michelin star in February of 2012.
In addition to Le 39V, Vardon heads the chic brasserie Z!NC DES NE!GES in Courchevel 1850 (there is also Z!NC Gennevilliers and Z!NC Opéra). Z!NC DES NE!GES is located at the bottom of the Les Chenus slope and offers lunch, tea time, and dinner. You can try one of the scrumptious casseroles, appropriately served in Le Creuset!
Whether you are in Paris or in Courchevel 1850, Chef Frédéric Vardon’s restaurants are not to be missed. The food is a mouthwatering regional journey that leaves you asking for more.
